Everyone loves one of those iconic peanut butter cups, but the sugar and all the other ingredients they add have me saying no thanks and looking for a healthier option. Enter my protein loaded almond butter cups. I use good quality dark chocolate for starters. Store brands like Lilly's no sugar added or Enjoy Life are some great options.
I hate to openly admit this, being a Southerner, 40 years in the making, but I have never ever liked pimento cheese spread. I know it's a classic here in the south, but the flavors just never sang to me… Until now.

When you hear the words "eat the rainbow", this nourish bowl is the picture next to the definition in the dictionary, or at least it should be. All the vibrant colors, all the textures, and all combined into one dish make this the most visually appealing and highly nutritious lunch and especially if you're going to take it for a picnic. It just goes fabulously with the great outdoors and particularly after a nice hike.
Creamy risotto with hearty, earthy mushrooms and sweet green peas. Yes please! And if the word "risotto" sounds intimidating to you, let me assure you, this version is not fussy or difficult. I did not even use the pricier, fancy Arborio rice that is typical for risotto. I used plain old Jasmine rice, which I always have as a pantry staple.
I love munching on nuts as a healthy snack. Briefly roasting them with a touch of sweet, amber maple syrup and coarse sea salt just accentuates the goodness. Each handful seems better than the last. So easy, and so good, and with all the healthy fats in these nuts, you can feel good about eating them.
