Everybody loves chocolate cake. I am such a fan of a good chocolate cake, but often don't have time to make one. I can whip up a chocolate cake batter pretty quickly, perhaps 15 minutes or so, but then you have to bake the cake, cool the cake, ice the cake, and whatever else you may intend to do to said cake. It's a long game. One I typically don't have time for.
I love the assistance of my microwave. I never shy away from using my microwave for great shortcuts, so I gladly pass this one along to you.

Artichokes are a gorgeous vegetable that are actually very easy to prepare, but people seem to be intimidated, and often will bypass them in the produce isle. Let me change your mind.
Glorious veggies. I love all veggies in an indiscriminately inclusive fashion and if you happen to roast them, I think I may love them even more, Root vegetables are especially wonderful and these roasted carrots with a cardamom infused sweet honey, butter and sesame seed drizzle are beyond delicious. I found myself snacking on them the next day, cold out of the refrigerator straight from their plastic storage container.
Shrimp and rice is a super easy and adaptable go to weeknight meal. It also happens to be absolutely delicious and typically you can get kids to eat it.
I like to make different taste profiles of shrimp and rice and really like this southwest version that has a great chili powder and cumin vibe, some heat from jalapeños, a sweet pop of corn and it all comes together with help from a jarred enchilada sauce.
Apart from the cute mouse in the Disney movie, ratatouille is a spectacular peasant dish comprised of inexpensive, humble vegetables like eggplant, tomatoes, peppers and zucchini, but treated with such care and respect that the dish has developed an almost cult following.
Tim and I were fortunate enough to visit the "City of Love" several years ago, so of course I had my list of things I wanted to check off as I strolled the streets of Paris. Crepes by the Eiffel Tower. Check. Walking along the Seine. Check. Window shopping along the Champs Elysees. Check. The idea of dining on authentic ratatouille however came to a screeching halt as none of the establishments we ate at in Paris had this iconic dish on their menu. It was only until we were driven by a sudden heavy rain shower while leaving the artsy village of Montmartre and forced to duck for cover into an Irish Pub style restaurant for dinner that oddly enough had ratatouille on their menu that my hope was rekindled.
I often have people tell me they simply don't know what to cook, are unenthused about the process or straight out intimidated during meal time planning and preparation.
I can sympathize with that sentiment, but being that I do enjoy cooking and the whole process from menu planning, purchasing groceries and getting down to the prep work, I feel that it's in my realm to be your advocate, encourager and mealtime mentor.
This delicious chicken dish reminded me that my millennial aged daughter (who happens to love to cook), told me that many millennials never really learned how to cook or grew up in households where perhaps their parents didn't cook often or if they did, the skills were not passed along.
Everybody loves cheeseburgers. Everybody loves pizza. I'm here to attest that a mash up of the two is a match made in Heaven, or at least made in my kitchen.
I've taken everything that is so quintessentially wonderful about a cheeseburger and put it into pizza form. The pizza dough being the bun and I've not spared the pickles.
We have many grand doggies in our family. Our youngest daughter Alana and her fiancé, Zach recently rescued miss Daisy, our newest grand doggie. Miss Daisy went from being abandoned on the roadside to being arguably one of the most pampered pooches in the animal kingdom.
Anything in a bowl is fun to eat. Everyone loves building their own bowls, so getting kids to eat something that they've had some Input on, like a bowl, is an easier task when you're in the realm of picky eaters.
Grilled vegetables are so alluringly delicious. Grilling brings out the flavor and sweetness of most veggies. I could eat a whole platter of the grilled garden bounty as a meal. Nothing else required. They're that good.
