Creamy risotto with hearty, earthy mushrooms and sweet green peas. Yes please! And if the word "risotto" sounds intimidating to you, let me assure you, this version is not fussy or difficult. I did not even use the pricier, fancy Arborio rice that is typical for risotto. I used plain old Jasmine rice, which I always have as a pantry staple.

I love munching on nuts as a healthy snack. Briefly roasting them with a touch of sweet, amber maple syrup and coarse sea salt just accentuates the goodness. Each handful seems better than the last. So easy, and so good, and with all the healthy fats in these nuts, you can feel good about eating them.
Chili is something everyone should have in the recipe repertoire. It is so simple to put together, fabulously delicious, and prepared correctly can also be quite nutritious. Lean ground beef, lots of tomatoes, beautiful protein and fiber rich kidney beans, and plenty of earthy spices all blend together to make this iconicity thick soup that is loved by all and can warm up any winter day.
One of my all-time favorite meals is delicately flaky fish accompanied by gorgeously caramelized, roasted vegetables. You can make all of this on a sheet pan and it is so unbelievably wonderful. The bonus to this is that it takes next to no time to put together. You can have a full, delicious, healthy Mediterranean style meal in about 30 minutes.
I love all things ginger, but when I read that ginger tea before bed ould possibly give you more solid and productive sleep, I begin incorporating it into our nighttime ritual in the form of a beautifully comforting, warm and aromatic cup of ginger tea.
