 Still warm from the oven
We recently spent some time in Montana. We rented a gorgeous condo in Big Sky and were joined by my siblings from Indiana and my bonus son Jacob, his wife Megan and our adorable granddaughter Eden who live in Missouri.
 This dish is spring in a bowl. It’s gorgeous and green and uses spring’s bounty veg…asparagus. It happens to be dairy free and vegan, but tastes so creamy with the addition of coconut milk.
A Dutch Baby Pancake is such a simple, inexpensive and impressive breakfast, brunch or breakfast for dinner idea. It puffs up so incredibly high as it bakes. Absolutely gorgeous.
 Honestly, I was never a fan of Key Lime Pie, until I decided to make my own dairy free version and I actually loved the result. I served it at a dinner party and it was a hit. I made it again and again, and every single time I had people tell me it was the best key lime pie they’d ever had. I found that so odd being that this is one of the simplest recipes. It goes to show that simple is best.
 I’m almost embarrassed to give up how easy this recipe is. Almost. 5 ingredients. Mix, bake, serve. 😉
