Sound simple? It truly is. This is also so rich, as far as satisfying family style casseroles go, that it is a number one requested side at every family gathering without fail. Someone will bring this to our family gatherings. We can bank on it. It’s so buttery, and with a whole stick of butter, that’s a given. I’ve thought about trying to take this into a healthier version of itself, but then I’d have a family mutiny on my hands. I’ve decided to leave well enough alone and share this little ditty of a recipe with you. I’ve gotten over the stigma if its simplicity and canned/boxed ingredients. It’s very simply and humbly “a-good-thing”. Indiana Corn Casserole 1 stick butter, melted (I melt mine in the microwave to further hasten this speedy side) 1 8 oz tub sour cream 1 15 oz. can corn, drained with a minimal amount of liquid still left (fire roasted corn is great if you can find it) 1 15 oz. can creamed style corn 1 box Jiffy Cornmeal mix Preheat oven to 350. Combine all ingredients in a large mixing bowl. Pour into a 8 inch round or square casserole dish and bake about 30-40 minutes or until set.
