Honestly, I was never a fan of Key Lime Pie, until I decided to make my own dairy free version and I actually loved the result. I served it at a dinner party and it was a hit. I made it again and again, and every single time I had people tell me it was the best key lime pie they’d ever had. I found that so odd being that this is one of the simplest recipes. It goes to show that simple is best. This tasty pie takes mere minutes to put together and then needs some chill time, which can be hastened with assistance from your freezer. I like it still slightly frozen, but it’s also fabulous chilled and right out of the fridge. CocoWhip by So Delicious is my go to for non-dairy whipped topping. I keep several containers of it in my freezer at all times for quick desserts. Check out one of my favorites, my Faux Semi-Freddo, that mixes up in minutes. Freeze, then eat. Fabulous! The tart, creamy lime filling is complimented by a sweet crust. I use a store bought crust for the sake of call this a super easy dessert. I love using the nut crusts that are out there, but my grandson prefers the old school graham cracker crust. Chocolate crust is also wonderful with the lime. Choose what you like. A little grated lime zest and twist of lime on the top make a party perfect presentation. Easy Key Lime Pie 8 oz dairy free cream cheese (I prefer Kite Hill or Miyoko’s) or regular cream cheese, softened 1 can sweetened condensed coconut milk, or regular sweetened condensed milk 1/3 c key lime juice, such as Nellie & Joe’s 1 tub CocoWhip topping, or other non-dairy whipped topping, thawed Zest of 1 lime (reserve a bit for the top) 1 graham cracker or nut crust Beat the dairy free or regular cream cheese with a hand mixer to remove all lumps. Add sweetened condensed milk and beat again until smooth. Add key lime juice and lime zest and mix well. Finally add in the Cocowhip or non-dairy whipped topping and mix just until it comes together. Pour into the prepared crust and chill or freeze until set. This freezes well if you want to make it in advance and then pull it out about an hour or so before you intend to serve it. Top decoratively with a twist of lime.
