TaylorKitchen Cook Together Roasted Salmon Dinner Ingredient List

The goal isn’t to have exact replicas of our dishes,  The goal is to have fun!  The menu is quick, healthy & easy to prepare.

Have your oven preheated to 425 degrees

On the menu:

TAYLOR RUB ROASTED SALMON - serves 4
12-16 oz salmon, arctic char or steelhead trout  (plan on 3 to 4 oz. per person)
Having these in 4 equal sized portions helps them to cook more quickly although I do roast a side of salmon when hosting a larger crowd
(You can use the rub on chicken or pork loin or chops although cook times will vary)  My vegetarian friends can use the rub on cauliflower steaks or florets.

Taylor Rub Ingredients
2 Tablespoons chili powder
2 Tablespoons coconut sugar or brown sugar
1 Tablespoon cumin
1 Tablespoon dehydrated onion (or 1/2 teaspoon powdered onion or garlic)
1 teaspoon garlic powder

1 teaspoon smoked paprika or you can use regular paprika
cayenne pepper if you like it hot ( I like to use Aleppo chili flakes)

course sea salt
olive oil

-You need a baking tray/sheet pan to fit your fish.   I line mine with parchment paper but you don’t need to (makes clean up easier).
-measuring spoons
-small bowl to mix rub in

ROASTED GREEN BEANS WITH BUTTER TOASTED ALMONDS CRUMBLED GOAT CHEESE

12 oz package frozen haricot vert (thin) green beans
2 -3 T thin sliced almonds ( I love an abundance of these almonds on my green beans)
1 - 2 oz. crumbled goat cheese
1 T butter or ghee (clarified butter)
Chili powder or Taylor rub (optional)
Olive oil
salt & pepper (course sea salt works best_

-You’ll need a baking sheet for this as well.  I line mine with parchment paper for easy clean up but you don’t need to.
You can use the same baking tray for the green beans as you do the fish if it’s large enough.  Otherwise, grab a second baking sheet for this.  You don’t want to crowd the green beans so they’ll roast nicely.
-small skillet or saucepan for almonds

SIMPLE SALAD WITH LEMON VINAIGRETTE
Your call on your salad ingredients.  Right now I’m loving a butter lettuce and radicchio blend, some shredded carrots and maybe cherry tomatoes and some goat cheese.  Pistachios for crunch.  Totally up to you.

Greens and veg of choice.  Keep it simple.  Even a little bag of field greens is perfect.
1 lemon
olive oil
honey - I only use a small amount of honey to reduce the tartness of the lemon.  You may prefer not to use it.
salt & pepper (course sea salt works best)

-you either need a mason jar to shake the dressing in or a small bowl with whisk or fork
-knife for lemon
-bowl to toss your salad
-tongs to toss

SUPER EASY MANGO LIME SORBET
1 package (small) frozen mango  No mango?  Try frozen strawberries or dark cherries.  Strawberries freeze firmer so you’ll need additional liquid or partially thaw your fruit.
1 lime
honey or agave. You only need to sweeten according to the sweetness of your mango or other fruit.  You can add some other sweetener, like Stevia if you want.

(Optional) Milk (Coconut milk works best) - Using a milk totally depends upon the thickness of your finished sorbet and is used to thin this out slightly if needed.  I use coconut milk if I need to, but this dilutes the flavor of the sorbet a bit so use sparingly.

-you’ll need a zester/grater and knife for the lime
-spatula &  ice cream scoop

This recipe requires a food processor.  Don't have one?  No problem.  If you have a blender you can alternatively make a dessert smoothie or milkshake adding additional liquid or perhaps some yogurt.  Also if you let your fruit soften a bit, this process will go easier, but mostly frozen is best for sorbet.
