I can think of no more quintessentially spring like sweet treat than lemon bars. Lemon bars are iconic "old school" cookie bars with a buttery shortbread crust and golden, sweet-tart lemon filling. They're usually dusted with powdered sugar once cooled, and cut into bars before devouring.

Tim and I enjoyed an amazing trip to Ireland on our first “across the pond” trip. I had a week to fit in everything I wanted to see in the Emerald Isle, didn’t even come close to accomplishing that, but loved every minute of it.
My Mom made delicious split pea soup for our family when I was growing up in the middle of a corn field. It was warming and hearty when the days were cold. Mom used ham in hers and probably was using what was left from a huge ham bone.

We were at a restaurant in the Venetian and the server asked if I would like one of their specialty of the house drinks, a Blackberry Aperol spritz. While I was a bit intrigued, I declined until he said the magic words "Half price happy hour" and insisted this was one of their most popular drinks. Ok, I caved.
Schnitzel is essentially a very thinly pounded cut of meat that is dredged in a bread crumb mixture and pan fried until crispy, golden perfection. It's truly easy and the basic concept can encompass several different types of protein.
