I first had an Aperol Spritz in southern Italy. While it was lovely and quite refreshing, the spritz I had was somewhat nondescript so thought nothing of it, thinking it was just not a drink that I truly loved. Fast forward to a recent trip to Vegas.
We were at a restaurant in the Venetian and the server asked if I would like one of their specialty of the house drinks, a Blackberry Aperol spritz. While I was a bit intrigued, I declined until he said the magic words "Half price happy hour" and insisted this was one of their most popular drinks. Ok, I caved.
While I typically drink about half of a cocktail and leave the rest for Tim to finish, I do believe I downed nearly the entire cocktail, which is a true testament to how much I really enjoyed this drink.
When returning to Atlanta, Tim made a pitcher of them as a Valentine's Day treat, then I set about making my own blackberry syrup and evolving the drink into a light, refreshing dreamy blackberry delight.
Making the blackberry syrup is so simple. Just blackberries, sugar and a touch of water. Let it simmer for a few minutes then let cool completely to use in this sensational spritz. Blackberry syrup can also be purchased at liquor stores but I really like to make my own.
Aperol is a lovely Italian aperitif that is reminiscent of orange and herbs and rhubarb. Definitely unique and delicious.
Adding Prosecco, which is the Italian version of champagne and not as dry, as well as club soda takes this from a cocktail that can be heavy and turns this beverage into a delightful spritz which is effervescent, refreshing and reminds me of spring.

Blackberry Syrup
1/2 pint blackberries 1/4 cup sugar (I like to use cane sugar) 1/4 cup water Add everything to a small saucepan and let simmer for about 5 minutes, mashing the blackberries as you occasionally stir. While I like the bits of blackberry in my syrup, you can also strain the syrup through a sieve, pressing the blackberries down to get all the juice out. Let the syrup cool completely before using. You can store in the refrigerator for up to a week. Blackberry Aperol Spritz Ice for glass 2-3 tablespoons blackberry syrup per glass 2 parts Aperol 2 parts Prosecco (a lovely Italian sparkling dry wine like champagne) 1 part club soda Garnish Blackberries (I put 2 fat blackberries on a decorative skewer) Mint sprigs If you want an even lighter version, sub out some or all of the Prosecco for club soda. It's totally up to you. To make the drink, add the blackberry syrup over ice then add the Aperol. Pour over Prosecco then top with club soda. Garnish with a blackberry skewer and a small sprig of mint & sip away. You can also increase the quantities to make a pitcher, topping with the Prosecco and club soda right before serving.
