If you've not seen or heard of the currently trending yogurt toast that's all over social media, let me enlighten you. It's very simply toast, topped with an egg and yogurt mixture then baked. The yogurt mixture comes out a lovely custard like texture and either pre or post baking you adorn it with your choice of toppings.
Most of the toppings I've seen are berries, which are great, but I had to go a different route and go savory. I was won over and my handsome hubby Tim also proclaimed that of my sweet and savory versions, he dd prefer the savory as well. Both versions are great and what an ingenious idea for breakfast, but also for snacks or a light lunch.
To start with I had to change up the toast for English muffins. The English muffins were far better than the toast version. The billowy custard sinks into all those nooks and crannies and toasting the muffins first ensures they retain a nice crispness when doused and baked with the eggy yogurt concoction.
The savory version is topped with sliced baby portobello mushrooms, sweet grape tomatoes or even sliced jalapeƱos for heat. I dust it off with some chili flake or even a bit of tart sumac, which is right next to the salt and pepper in my world as we sprinkle it on eggs, salads or avocado on a daily basis. Topping it off with chili garlic crisp oil is also a favorite way to finish this muffin.
The sweet version has a bit of honey and good vanilla lending a hand in the yogurt mixture while I do still stick with lovely berries and an adornment of mini chocolate chips on top just because. Chocolate is never a bad idea.

English Muffin Yogurt Toast (Sweet or savory) Makes 4 Preheat oven to 400 degrees 2 English muffins, split in half 1/2 cup full fat greek yogurt 1 egg 1 tablespoon honey (omit for savory version) 1 teaspoon vanilla (omit for savory version) Pinch salt (I use course sea salt) Sweet Toppings ideas: Blueberries Sliced strawberries Diced pineapple Halved grapes Cinnamon Mini chocolate chips Powdered sugar Sprigs of mint Savory Toppings ideas: Halved grape tomatoes Sliced mushrooms Sliced jalapeno Crumbled sausage or bacon Chili garlic crunch (a spicy, garlicky Asian chili oil with crunch) Chili flake ( I love Aleppo chili flake as it's slightly smoky, floraly and not as hot) Sumac For the sweet version, whisk the yogurt, egg, vanilla, honey and salt together well. Spoon evenly over the 4 halves of English muffins that you've placed on a parchment lined baking sheet, Top with sweet toppings of your choice. For the savory version, whisk the yogurt, egg and salt together well. Spoon evenly over the 4 halves of English muffins that you've placed on a parchment lined baking sheet. Top with savory toppings of your choice. Bake for 15-20 minutes until the custard is set and starting to turn golden. You can finish off with a dusting of powdered sugar and sprig of mint for the sweet version or a drizzle of chili crisp oil or sumac for the savory version.
