The Dollar General Challenge came about as an off the cuff comment I made to my husband one day when we were in the mountains of North Georgia looking at a lovely property. There was nothing around for miles. Nothing that is except a Dollar General. I made a joking comment that I'm always up for a challenge and I'd consider it a test of my creative abilities to see if I could come up with meals from what we purchased out of that particular Dollar General.
I actually loved that idea so kept asking Tim if he'd go into a Dollar General and buy me some random ingredients from which I'd make our dinner. I pressed and pressed until finally he agreed.

This gorgeous presentation of a phyllo pastry wrapped fish is actually so easy and a great way to ensure the fish stays juicy while cooking. If you were to present this to dinner guests, I think they'd be blown away with how something so fancy looking could actually be so easy. Crispy, golden phyllo encasing the lovely, succulent fish makes for a wonderful bite.
Hot dish is a midwest casserole style dish that typically contains a meat like a ground beef, canned or frozen veggies and often one of those iconic cans of creamed soups and is then topped with potato tots or perhaps hash browns.
As a kiddo, Spritz were one of my favorite cookies. My mom would make them around Christmas and they had the standard red and green sugar dusted over them. They were piped into a 1 inch rectangle similar to a cheese straw.
These airy cookies remind me somewhat of a shortbread as they're simply flour, sugar and butter but unlike shortbread, these have an egg involved in the mix.
Fish en papillote, or fish in paper, is one of the easiest yet most show stopping presentations of fish and the foolproof method keeps the fish moist and flaky, sealing it all up in a pretty pouch that steams as it cooks. When I say easy, I truly mean easy and with taking about 10 minutes to assemble and 10 minutes in the oven, it's also quick. Easy? Quick? Delicious? Pretty? All those make my date night dinner checklist so this fish en papillote is definitely on our date night menu.
I can confidently say you can have freshly baked from scratch cookies in 15 minutes. And not just any cookie. Gooey, chocolately, decadently delicious cookies that the whole family will love unless there is a chocolate hater among you, and then we'd have to discuss disavowing them. Just kidding. We jest in love as I do know one singular person who actually does not like chocolate. One singular person. I'll make some other type of cookie for that person.
