There's nothing better on a chilly evening than deep mahogany, smoky, slightly spicy, comforting, warming bowl chili. We all love chili in our house and each member of the clan is quite particular about how it's served up.
These cookies are so special. The melting chocolate and kick of espresso really take them over the top and make them one of my current go to favorites. These were inspired by my iced coconut sugar oat milk espresso, which is a great coffee drink that I love to make for people when they come over.

I have fond memories of roasted acorn squash in the fall. My mother would cut an acorn squash in half, scoop out the seeds and fill the wells with butter and either maple syrup or brown sugar and serve up those gorgeous roasted halves of sweet buttery squash. It was a true delight.
