I have a penchant for a certain coffee shop that shall remain nameless. I've spent way to much money at said store and am now on a mission to recreate my favorite drinks in my own coffee shop; ie: my kitchen. I am my favorite barista.
This rendition is my current favorite and being that I always have coconut sugar on hand I decided to make my simple syrup with that instead of using the brown sugar that is standard for this drink. I am happy to say that this version is so flavorful thanks to the coconut sugar, that has a taste profile reminiscent of toasted marshmallows. How wonderful.
I like to use coconut sugar for its amazing flavor and the fact that it contains some inulin fiber, lessening the likelihood of blood sugar spikes. It also contains electrolytes such as potassium and magnesium. But mostly I just like the flavor. Just sayin'.
I use a 1 part sugar to 2 parts water in my simple syrups, although 1:1 is more standard. You can make your simple syrup as you please.
Oat milk is relatively new in my world and is the perfect creamy milk alternative for this drink. When you think about it, brown sugar over oats is a very widely used combination. Coconut sugar mimics the taste of brown sugar so it would be a natural that a coconut sugar flavored simple syrup would go so well with oat milk. Just intuitive. ![]()
You can use other milks if you prefer, but in the dairy free world, oat milk or coconut milk top my list of creamy milk alternatives.
Make the simple syrup in advance and keep a jar in your fridge so you can make this afternoon pick me up any time you want. So good!
Coconut Sugar Iced Oatmilk Espresso
Coconut Sugar Simple Syrup 1 cup water 1/2 cup coconut sugar (or brown sugar) Combine over medium heat and let it come to a simmer. As soon as sugar is completely dissolved (which should be right as it starts to simmer), remove from heat and let cool. I store this in a jar in my fridge for several days worth of oat milk espressos. For 1 drink 2 shots espresso that has been brewed & cooled (or equal amount strong coffee or cold brew concentrate) Ice Coconut sugar syrup to your sweetness level. ( I like about 1-2 tablespoons in a tall drink) Oatmilk to your desired "creaminess" level. (Coconut milk is also quite good here) Pour espresso or cold brew over ice in a glass. Add in the amount of sweetness in the way of the coconut sugar syrup to your taste. Stir to combine. Top off with oat milk. You can also combine the ingredients for your drink into a jar with a tight fitting lid and shake until nice and foamy. Pour into a glass and slurp away.
