Everybody loves chocolate cake. I am such a fan of a good chocolate cake, but often don't have time to make one. I can whip up a chocolate cake batter pretty quickly, perhaps 15 minutes or so, but then you have to bake the cake, cool the cake, ice the cake, and whatever else you may intend to do to said cake. It's a long game. One I typically don't have time for.
I love the assistance of my microwave. I never shy away from using my microwave for great shortcuts, so I gladly pass this one along to you.
If you're ever wondering on a Tuesday night how you can quickly get chocolate cake onto the menu, I have the perfect solution.
All you need to do is mix a few ingredients in a mug, pop it in your microwave for 60 seconds give or take, and quickly enjoy a delicious, decadent, chocolate cake complete with melty chocolate middle.
Everyone needs to have a really good microwave mug cake recipe in their back pocket, so this one is my gift to you.
Just imagine digging into this warm cake either topped with whipped cream and strawberries or good vanilla ice cream which is perfectly melting into this hot chocolate cake. Heaven!
Of course there are variations on this cake. I've added a hint of cinnamon, but this would also be quite amazing with a little bit of instant espresso powder, and some really good vanilla, or even the combination of cinnamon & cayenne which makes it more of a Mexican chocolate mug cake. The options are endless and only limited to your creativity.
So join me in this chocolate mug cake experience, and be ready to dig in with a very large spoon and a smile on your face. Chocolate Microwave Mug Cake (gluten free & dairy free) 3 tablespoons gluten free flour 2 tablespoons coconut sugar (or brown sugar) 1/2 teaspoon baking powder 1 tablespoon cocoa powder ( I used raw cacao) 1/8 teaspoon cinnamon Small pinch salt (I use course sea salt) 3 tablespoons coconut milk (or other dairy free milk) 3 tablespoons olive oil 1 tablespoon mini chocolate chips (I used a Stevia sweetened chocolate chip from Thrive Market) In a microwave safe mug mix the dry ingredients together (flour through salt). Add coconut milk and olive oil and mix together well. I like to use a fork for this purpose. Add the tablespoon of chocolate chips to the middle of the mug. Microwave for 60 seconds. Your microwave may take more or less time, but it will be very close to a minute. The center should have the lovely melted chocolate while the cake is just cooked through. This is perfect with a scoop of vanilla ice cream or some coconut whipped cream and strawberries. Dive into decadent chocolate cake any day of the week in no time flat.
