I think we can all agree that oats are good for you. We need those hearty whole grains in our diet and these overnight oats with the beautiful toasted dark sesame seeds, plump pops of chia seeds, kick of espresso and sweet bits of currants, or your dried fruit of choice, make this a fabulous start to the day. What a way to break the fast.
If you've not had overnight oats, they're quite delicious. They're soaked overnight, hence the name, in some milk and then all the add ins are what makes your personal oat jar individualized.
I love the addition of some chocolate and cherries, or bananas and almond butter. It's quiet a treat.
This version with the toasted sesame seeds is phenomenal. If you can't find back sesame seeds, it's totally fine to use the white sesame seeds, but I love the color they lend to the oats. Chia seeds - These protein and fiber packed seeds soak in the oats overnight, or for several hours and become plump, lending a slight pop in your mouth. Flax - Nutty flax also contains fiber and protein and also includes important Omega 3 fatty acids.
Try these oats. They're quite special...delicious, hearty and nutritious. Enjoy as is, or with a drizzle of maple syrup and some berries or chopped apples.
Toasted Black Sesame Overnight Oats Makes 1 1 cup coconut milk (or milk of choice) 1/2 cup quick cooking oats (not instant) 1/4 cup currants, raisins, or other dried fruit of choice 1 tablespoon black sesame seeds, toasted (see below) or regular sesame seeds 1 tablespoon chia seeds 1/2 tablespoon flax meal 2 teaspoons cacao nibs (or mini chocolate chips) optional 1 teaspoon instant espresso powder (or instant coffee) To toast the sesame seeds, simply put them in a small dry skillet over medium heat for about 60 seconds. As soon as you begin to smell them, pull them off the heat and let cool. Mix all ingredients together in a glass or jar. Cover and refrigerate overnight or for at least 2 hours until the chia seeds soften. Enjoy as is, or with a drizzle of maple syrup and some berries or chopped apples.

I haven't tried overnight oats in some time. Thanks for the reminder and all the great suggestions on what to put in it. I have everything on hand except the flax meal. How important is that?
