I am a huge fan of dates, and when you stuff them with a creamy cashew butter, drizzle over dark chocolate, add a sprinkling of flaked sea salt and let them chill until set, they are a dreamy afternoon snack or anytime treat.
![]() Sweet, chewy dates have an almost caramel like flavor, but beyond that they're rich in fiber, antioxidants and can promote brain health. These are a sweet treat, that's sweet back to you as they have good amounts of iron, potassium and magnesium. A snickers bar can't do that for you, but this treat sure can.
I like to buy my dates with the pits in them and then remove the pits prior to using. It takes no time at all and I just feel the dates are fresher and softer that way.
I chose Lilly's dark chocolate for these which is sweetened with erythritol and Stevia. You can certainly use any chocolate that you like, but I highly recommend dark chocolate for this.
I just melt in 30 second increments in the microwave, stirring in between until the chocolate is smooth and creamy. I add a small amount of olive oil as well, just to get the creamiest, glossiest texture.
This treat is so easy that kids can make it for themselves after school and you can feel good knowing this is not a sugar laden snack . Keep a few extra in your fridge to pull out for that afternoon slump when you want something sweet without a sugar crash.
I promise these are so incredibly yummy. You will think you're eating a candy bar.
Chocolate Covered Nut Butter Stuffed Dates
(Make as many as you like) Whole dates (I like to buy with the the pits for freshness) Cashew butter (or you favorite nut butter *1/2 cup Chocolate chips (I used Lilly's which are sweetened with Stevia & erythritol Flake salt (optional) *(1/2 cup chocolate chips will make enough melted chocolate to cover about 12 dates) In a microwave safe container, melt the chocolate chips in 30 second increments and stir in between until you have smooth chocolate. I added about 1/2 teaspoon of olive oil once out of the microwave to have an even smoother, glossier chocolate. Remove pits from dates & open them up. Place on a parchment paper lined small baking sheet. Place a small amount of nut butter in the center of your date, then close up. Drizzle melted chocolate over the top and let ooze all around the date to nearly cover. Sprinkle with flake salt if using and place in fridge or freezer for just a few minutes until set. Enjoy and keep any leftovers in the fridge for great afternoon pick me ups. Perfect after school snack for kids...or big kids.
