I love that these cookies are easy, slightly unique, and have that wonderful sesame flavor. They are so delicious, with the coconut sugar complementing that tahini and rolling them in black and white sesame seeds just makes them super cute.
I make the whole batch in a bowl by hand, but you could use a hand mixer if you want, or even a stand mixer, but definitely not needed for these very easy cookies. ![]()
Tahini is simply ground sesame seeds. It works very similarly to most nut butters and can be substituted as such.
If you have difficulty coming across tahini you could also use your favorite nut butter. Cashew butter would stand in very well here, but tahini does have a very definitive flavor.
I also love a cookie dough that I don't need to chill before baking. This takes five minutes to mix together and then I can immediately begin rolling balls of dough in the sesame seeds and baking them. 10 minutes later I have cookies!
Sesame Tahini Cookies Makes a dozen 1/4 cup unsalted butter, softened 1/4 cup coconut sugar (more if you like a very sweet cookie (up to 1/2 cup) 1/4 cup tahini (sesame paste) 1 egg. I'm loving Vital Farms Pasture Raised Eggs (super golden yolk) 1 teaspoon vanilla (I love vanilla paste) 1/4 teaspoon sea salt 3/4 cup all purpose flour Look for organic, unbleached flour like King Arthur 1 teaspoon baking soda 2 tablespoonsblack sesame seeds 2 tablespoons white sesame seeds Preheat oven to 350 degrees. Either by hand or with a hand mixer, beat the butter until nice and creamy in a large mixing bowl. Add the sugar and continue to mix until well combined and the sugar crystals are mostly dissolved. Mix in the tahini. Add the egg, vanilla and salt and mix again. Add in the flour and baking soda and mix well, being careful not to over mix. Combine sesame seeds in a shallow bowl. Using a small ice cream scoop for uniform cookies, scoop a ball of dough and place in the sesame seeds, rolling to coat all sides. Place cookie on a parchment lined baking sheet and continue with remaining dough. I press the cookies down very slightly Bake for about 10 minutes at 350 degrees until just set in the middle. Let cool.
