Zabaglione (or Sabayon) is a delectable, creamy, marsala essenced dessert sauce that can be made in minutes with just 3 ingredients. It's lucious, velvety and oh so addictive. Perfect over berries, pound cake, crumbled cookies and fruit, Get creative & this all purpose sauce will inspire you in dessert territory.
Slightly sweet Marsala is a fortified Italian wine used in most original recipes for Zabaglione, but you can certainly experiment with other liquors (like Gran Marnier) or juices such as apple or apricot for varied renditions.
The preparation is quite easy. 3 ingredients...eggs...sugar...marsala. Heat, whisk, serve.
Having a double boiler/water bath or Bain Marie if you care to use a French term for an Italian dessert, gives you the perfect outcome. Whisk, whisk, whisk until light and fluffy and the mixture starts to thicken,
Once cooked, simply add the sauce to a jar & keep tightly covered in the fridge for up to 2 weeks.
I found myself inserting a spoon to taste, and then another, and then another. Apparently Zabaglione needs nothing to accompany it. I could have eaten the whole lot like a cold, custardy soup.
This is such a delight & such a simple trick to pull out of your entertainment hat. Delicious berries, halved & grilled peaches, moist pound cake or even store bought angel food cake. Drizzle some Zabaglione over & you have an instant, impressive dessert.
The kicker...this beautifully glossy sauce with its Marsala finish can be made in advance & stored in the fridge, so no extra effort needed when guests arrive. Simply pull it out of your fridge and serve. This is special sauce for sure!

3 Ingredient Zabaglione (Sweet Marsala Sauce)
Equipment Needed - Double Boiler, or heat proof bowl placed over a pot of simmering water Makes 1 Pint of Sauce 6 egg yolks (use the whites for an egg white omelette or my Chocolate Espresso Cups) 1/2 cup cane sugar 1/2 cup Marsala Place a heatproof bowl over a pot of simmering (not boiling) water.. Add the yolks and the sugar to the bowl & begin whisking until the sugar is completely dissolved. Add marsala and continue whisking until the mixture becomes thick and glossy. Note that the alcohol will not cook all the way out, so this is not a kiddo friendly sauce unless you substitute the marsala with a juice such as apple, mango, apricot, etc.
