It's pumpkin season, and everyone needs a good dip to put out for fall party season, whether it's your autumn family get together, tailgating or other sports festivities, or simply a pre-Thanksgiving nibble.
This creamy dip is super easy to put together with the help a food processor, using a block of feta and a cup of puréed pumpkin. Make sure you don't use pumpkin pie filling, which is already flavored, but plain pureed pumpkin.
The great thing about dips is they often come together in just seconds, allowing you to place an appetizer on the table for unexpected guests in no time at all.
While this dip is fabulous as soon as you bullets it together, it even seems to get better the next day as all the flavors have a chance to meld together.

Whipped Pumpkin Feta Dip 8 ounce block feta cheese. (drain well if packed in brine) 1 cup pumpkin puree 1 teaspoon dried thyme 1/4 teaspoon smoked paprika 1/2 teaspoon pepper 2 tablespoon olive oil (optional) 1 tablespoons toasted pumpkin seeds Crumble the feta into a food processor and puree until it becomes somewhat smooth. Add in pumpkin, thyme, smoked paprika and pepper and whiz until fluffy and creamy, pausing once to scrape down the sides. If your mixture looks more dry than you'd like, add the olive oil and blitz again. Pour into a serving bowl and garnish with pumpkin seeds. This is even better once it sets. If any liquid separates as the dip sits in the fridge, just give it a stir.
