Vietnamese avocado shake or pudding, known as sinh tố bơ, is a creamy, delicious drink that perfectly balances the rich flavor of avocados with sweetened condensed milk and ice. It's a refreshing treat, especially in warmer weather and I made mine totally dairy free.

I had been seeing this emerald green sweet treat on some of my social media feeds, but when my daughter dined at a Vietnamese restaurant and sent me a photo of her dessert there (Sing To Bo), I knew I had to give it a try myself, Boy was I glad I did.

Step-by-Step Instructions
  1. Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a blender.
  2. Blend the Ingredients: Add the milk, sweetened condensed milk, sugar, ice, and a pinch of salt to the blender.
  3. Blend Until Smooth: Blend on high until the mixture is smooth and creamy. You can adjust the thickness by adding more milk or ice as needed.
  4. Taste and Adjust: Taste your shake and add more condensed milk or sugar if you like it sweeter.
  5. Serve and Enjoy: Pour the sinh tố bơ into glasses. For a special touch, drizzle some condensed milk on top or sprinkle with crushed nuts.

Tips for the Perfect Avocado Pudding
  • Choose the Right Avocado: Look for avocados that yield slightly to pressure for optimal creaminess.
  • Perfect avocado Hack:  If you have perfectly ripe avocados on your counter, but aren't ready to use them, simple put them into a container, cover with cool water and place in your fridge.  They'll keep at that perfect ripeness for up to 2 weeks,
  • Get Creative: Mix in other fruits like bananas or mangoes for a tropical twist or a bit of matcha for a beautifully floral green tea vibe.
  • Serve Fresh: This shake is best enjoyed immediately, but if you have leftovers, store them in the refrigerator and stir well before drinking.

Vietnamese Avocado Pudding (or shake)

  • 1 ripe avocado, halved & pit removed
  • 1 cup full fat coconut milk (whole milk  can be used as well)
  • 1-2 tablespoons sweetened condensed milk (adjust to taste) I use coconut sweetened condensed milk to keep this dairy free
  • 1/2 cup crushed ice (more if you like if very icy)

  2. Blend Ingredients: Add the milk, sweetened condensed milk and ice to the blender.
  3. Blend Until Smooth: Blend on high until the mixture is smooth and creamy. You can adjust the thickness by adding more milk or ice depending on your preference.
  4. Taste and Adjust: Taste the shake and adjust the sweetness if needed by adding more condensed milk.
  5. Serve: Pour into glasses or cute dessert cups. You can garnish with a drizzle of condensed milk on top or a sprinkle of ctoasted coconut flakes & a mint sprig.
