(Valentine Sheet Pan Supper for 2)
Herb Butter Salmon, Prosciutto Wrapped Asparagus Bundles & Cheesy Sun Dried Tomato Grits. Don’t forget the Chocolate Ramekin Microwave Cakes! Preheat oven to 400 degrees. Herb Butter Salmon 2 3-4 oz salmon filets 2 T Mix of fresh herbs( such as rosemary, thyme & parsley), chopped finely 2-3 T Butter (unsalted) Salt to taste Melt butter in a microwave safe bowl then mix in herbs. Place salmon on sheet pan and drizzle with about half of the butter. Sprinkle with salt. Prosciutto Wrapped Asparagus Bundles 8 stalks asparagus 1 sheet prosciutto cut in half Wrap a half of prosciutto around a bundle of 4 asparagus. Place seem side down on sheet pan. Drizzle with a small amount of the herb butter and sprinkle with salt. Cheesy Sun Dried Tomato Grits 2 packages instant grits 1 c plus 2 T coconut milk 1 T sun dried tomatoes packed in oil, chopped finely (you’ll also need about 2 teaspoons of the oil) 1/2 c good melting cheese like smoked gouda, Fontina or gruyere (shredded) Mix grits into coconut milk, add sun dried tomatoes and 2 t of the oil they were packed in and microwave about 1 minute in a microwave safe container. Add most of the cheese, saving just a bit for the tops. Pour into 2 buttered 4 oz. ramekins and top with remaining cheese and place on sheet pan. Place sheet pan in a preheated 400 degree oven. Bake approximately 15 minutes until salmon is perfectly done in the center. If your asparagus is very thin, you may need to add them about 5 minutes into the cooking process so they have less time in the oven.
