The cornmeal in the crust gives this tart such a satisfying crisp crunch and warm tomatoes with oozy, tangy goat cheese make it the perfect compliment to the cool, peppery watercress on top. Summertime in a bite. The tart looks pretty and impressive so definitely pull this one out for a party or summertime get together. Crust 1 c flour 1/c c cornmeal pinch of salt 6 T very cold butter, cubed 2-3 T ice water Tart 3-4 tomatoes, thinly sliced olive oil to drizzle 2 oz. goat cheese salt and pepper watercress or arugula balsamic glaze Mix the flour, cornmeal and salt in a food processor then add cold butter and combine until the mixture resembles course crumbs. Add water a small amount at a time until the dough just starts to come together. Pat the dough out into a rectangle, wrap tightly in plastic wrap and chill for at least 30 minutes. You can also make the pastry by hand, cutting the butter into the flour with a pastry cutter or forks. For a great short cut you have my full permission to use a store bought pie crust, it just won't have the nutty cornmeal crunch. Roll out into a longer rectangle shape (I like to roll between 2 sheets of parchment paper), or roll on a floured surface until the rectangle is about 10 inches long and 5 or 6 inches wide. Crimp the edges up slightly to make a lip around the tart. Prick the dough with a fork to keep bubbles from forming in the crust when bakes. Bake in a preheated 400 degree oven for about 15 minutes.. Pull out of the oven and drizzle with olive oil to help seal the crust. Arrange tomato slices, slightly overlapping on crust and crumble goat cheese over tomatoes. Sprinkle with salt and pepper. Bake another 10-15 minutes, covering loosely with foil if crust starts to get too brown. Remove from the oven and top with watercress or argula and drizzle with balsamic glaze. This is also great at room termperature.
