I’m always looking for new and interesting brownie ideas. They’re always a hit at parties and easy to prepare. I happen to be a lover of Tiramisu and had a light bulb moment where I thought “hey, why not combine a brownie with tiramisu?” What occurred out of that marriage is the ultimate indulgent brownie.
The creamy mascarpone topping is flavored with coffee and so is the brownie layer. Lady fingers, an essential in tiramisu, are baked right into the brownie so you get a great contrasting texture as well as a beautiful layered look when you cut into them. Dust the top with cocoa powder and you have a fabulous sweet treat.
To make this so easy I’m using a packaged brownie mix to start with, but you can make your very own favorite brownie batter if you want.
Tiramisu Brownies
Brownie Layer I package brownie mix that makes an 8x8 pan (I also went with a gluten free mix like Otto's for mine and I like a fudgey brownie texture) 1 sleeve (12) lady finger cookies (I go for the crispy kind as opposed to the soft variety for more texture in my finished brownie) Coffee - You’ll need strong cooled coffee or cold brew concentrate like Califia to replace the water in the brownie mix. plus 2 T very strong coffee or espresso powder or 1T instant coffee dissolved in 2 T water for the topping Tiramisu Topping 2 -8 ounce containers mascarpone, cream cheese or vegan cream cheese at room temperature 1/2 cup powdered sugar 2 Tablespoons very strong coffee or espresso or 1 Tablespoon instant coffee dissolved in 2 Tablespoons water and cooled 1 teaspoon vanilla (I like vanilla paste) Cocoa powder for dusting the top Preheat oven to 350 degrees. Line an 8x8 baking pan withparchment paper. Make sure you have enough overlap to be able to pull the finished brownies out of the pan when they’re done. Arrange your 12 lady fingers in the pan. Prepare brownie mix according to package directions using coffee to replace the water then pour batter over lady fingers, coaxing the batter to the edges. Bake at 350 for 35-40 minutes (according to your particular package directions) or until baked through. Prepare the tiramisu topping by mixing the mascarpone, powdered sugar, coffee and vanilla together until well combined. Keep chilled until ready to use. Once brownies are baked you need to cool them completely before topping with the tiramisu mix. I like to then refrigerate the whole pan for several hours before removing from the pan, using the parchment paper to help lift out, dusting with the cocoa powder using a small sieve, then cutting into squares. I clean my knife between cuts to ensure the beautiful layers remain clean. So pretty!
