These are adventurous small batch cookies with a fun spin on the traditional Snickerdoodle recipe. Each batch makes about a dozen and can easily be doubled or tripled. While I started with Cardamom Doodles, I ended up loving my Rose Doodles with the essence if rosewater (very prevalent in Middle Eastern Cuisines). Also being that I adore all things Matcha (a beautifully green powdered tea), I had to make a Matcha Doodle batch. Definitely fed my matcha love.

Cardamom Doodles
Preheat oven to 350 degrees 1/4 cup unsalted butter, softened, or coconut oil 1/4 cup sugar plus extra for rolling the cookies in (I like coconut sugar for many of the combinations) 1/4 teaspoon salt (I like fine sea salt for this) 1 egg 1 teaspoon vanilla or vanilla paste 3/4 cup flour (whole wheat pastry flour works well w/this as does gluten free flour) 1 teaspoon baking soda 1 teaspoon cardamom, halved (half for the dough and half for the sugar mixture) Cream the butter and sugar together then beat in the egg, salt and vanilla. Add in the flour, baking baking soda and 1/2 teaspoon cardamom. Mix until combined. Cover and chill 30 minutes. Mix together about 2 tablespoons sugar and remaining 1/2 teaspoon cardamom Roll into equal sized balls, then roll in sugar and cardamom mixture. Place on parchment lined baking sheet and press down just a bit. Bake for about 12 minutes. Rose Doodles Replace the vanilla with 1 teaspoon rose water (available online and in some well stocked liquor stores) Replace cardamom with 1 teaspoon ground rose petals. Culinary grade rose petals can be purchased online and ground in a coffee grinder that that you use specifically for your spices. This works best with a lighter sugar like a natural cane sugar and you’ll roll them in the sugar and 1 teaspoon ground rose petals. The color is pretty and feminine. Lavendoodles Replace cardamom with 1 teaspoon ground lavender. Culinary grade lavender can be purchased online and ground in a coffee grinder that that you use specifically for your spices. Roll in ground lavender and sugar. Lemon Doodles Use 1 teaspoon lemon zest in the dough to replace cardamom and 1 teaspoon in the sugar as well that you are rolling the cookies in. Espresso Doodles Use 1 teaspoon espresso powder in the dough to replace cardamom and 1 teaspoon in the sugar you are rolling the cookies in. Matcha Doodles Use 1 teaspoon matcha powder in the dough to replace cardamom and 1 teaspoon in the sugar that you roll the cookies in. You get the idea. Go forth and create Doodles!
