Nachos are such a crowd pleaser . They’re not expensive to make and everyone gets to top theirs to their liking. To each his own. This version subs in crispy sweet potato fries for the chips so you get a bit of sweet with all the spice and vibrancy of the toppings.
The salsa verde chicken couldn’t be easier and I have options for both slow cooker and pressure cooker (like my Ninja Foodi). Both are available on my SHOP page, but you can also do this low and slow on the stove top. Options abound. Using less expensive chicken thighs ensures super flavorful chicken that is enhanced by the simple addition of jarred salsa verde.
My Ninja Foodi is used again to make the crispiest sweet potato fries. On the air crisp setting they come out perfectly crunchy every time. You can choose to make these in the oven as well. I love the Alexia brand and recently discovered their chipotle version of sweet potato fries so my nachos had some kick for sure.
Set up a bar for all the accompaniments and let your family top their nachos with all the goodies. So much fun and they are seriously good!
Sweet Potato Fry Nachos
Serves 4 (or more) Salsa Verde Chicken 6 boneless, skinless chicken thighs 1 jar salsa Verde (Such as Frontera) Large pinch salt Cook chicken. Slow Cooker - Combine chicken and salsa. Cover and cook on high for 3-4 hours. Pressure Cooker (like a Nina Foodi available on our SHOP page) - Combine chicken and salsa. Seal and cook on high for 20 minutes. Let pressure release naturally for 10 minutes, then quick release. Either of these are great options to either set it and forget it, or have moist and tender chicken ready to shred for tacos or anything else quickly. Both are found on our SHOP page Shred chicken with 2 forks. Sweet Potato Fries 20 ounce package frozen sweet potato fries. I like Alexia brand chipotle version. Cook according to package directions. I like to cook mine in my Ninja Foodi (available on our SHOP page) at 390 degrees for about 20 minutes. They get super crispy this way. Top a mound of crispy sweet potato fries with shredded chicken and all the accompaniments that you want. Anything that works on a traditional “or non-traditional” nacho would work. You do you! Accompaniments & Toppings Shredded Cheese Tomato Crema, sour cream, greek yogurt or *chipotle lime crema Jalapeños Scallion a/k/a green onions Black olives Cilantro Lime *My chipotle lime crema is simply 1/2 cup sour cream or greek yogurt, juice of 1 lime, and as many dashes of chipotle hot sauce (like Cholula) as you like. About 1 teaspoon it typically where I land. Mix together well.
