You're gonna love this recipe from my fitness guru friend, Sarah Carter of Swellness, LLC. Perfect for busy weeknight cooking and who doesn't love something in a bowl. Protein loaded ground turkey and quinoa, sweet fire roasted tomatoes and niblets of golden corn all loaded up with a super flavorful taco seasoning blend (use a package or make this great version). So adaptable. This recipe can utilize whatever you have on hand., Ground beef or plant based crumbles instead of turkey? Add in sauted onion and red bell pepper? Brown rice instead of quinoa? All on a bed of greens? Go for it! You could even switch up the flavor profile to make this a Greek bowl by adding chickpeas/garbanzos instead of the quinoa, using a mediterranean spice blend and crumbling feta over the top. You can see how easily this recipe can morf to fit what you have on hand. I love how satisfyingly savory it is with warm Mexican inspired spices. Absolutely fabulous and all in 20 minutes tops. I had cooked my quinoa previously in my Ninja Foodi. It took a whopping 2 minutes of pressure cooking. I froze some for later & used the rest in this recipe.
You make the savory mixture, get out your bowls, then line up all the accompaniments and have your family top their own bowls with whatever they like. Lots of fun! Turkey Quinoa Taco Bowls
Serves 4-6 1 lb. Ground turkey 1 tablespoon olive oil 1 14 ounce can diced tomatoes (use fire roasted for even more flavor) 1 12 ounce bag frozen corn, partially thawed 1 cup cooked quinoa (can use packaged). I used my Ninja Foodi to cook the quinoa in 2 minutes Taco seasoning blend (see recipe below) In a medium skillet over medium heat, add the oil and ground turkey. Cook until the turkey is nearly browned. Add in the tomatoes, corn, quinoa & taco seasoning. Continue to cook & stir until the turkey is completely cooked through. Place into large bowls and garnish with all your favorite toppings. I love a squeeze of lime and an adornment of avocado. Garnish with optional: Lime wedges to squeeze over Sour cream Chopped cilantro Jalapeno Avocado Shredded cheese Taco Seasoning Blend (for 1 pound of meet, tofu or veg) 1 tablespoon chili powder 1 1/2 teaspoon cumin 1 teaspoon sea salt 1 teaspoon black pepper 1/2 teaspoon paprika (I love smoked paprika) 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon chili flake (I love Aleppo chili flake for its smoky, floral notes) 1/4 teaspoon dried oregano Combine all ingredients & store in an airtight container or use immediately, You'll want to make quadruple amount of this seasoning blend & keep it on hand. I can use taco seasoning at least once a week.
