Looking for a quick snack or lite lunch with unlimited possibilities of combinations? Behold the Snackadilla! I made 2 versions, but the possibilities are endless. Think nut butter, jam, bananas or strawberries and nuts for the kiddos. Sauted greens, shredded cheese, olives and sun-dried tomatoes for a Mediterranean twist.
Just think of your tortilla base as the canvas, divided into quadrants and go to town. Geometry has never been so tasty. I used grain free tortillas for mine, but any type of tortilla works. Cut a slit in the tortilla from the center to the end, marking the beginning for the quadrant fold (see video). Start layering your 4 ingredient picks in each quarter of the tortilla then begin to fold in fourths clockwise. Nut butter madness Nut butter Jam Bananas or strawberry slices Crushed pecans Mediterranean Mini Meal Sautéed spinach or other greens Shredded cheese Olives Sun dried tomatoes Hummus Amongus Hummus Olives Roasted red pepper Herbed feta AND Go crazy!
