Smoky cauliflower accented with one of my favorite spices, smoked paprika, roasted red peppers, melty cheese and anything else your heart desires all in a beautifully golden, toasty tortilla. That's a great quesadilla right there folks!
This is a leftovers dish extraordinaire, using my smoky roasted cauliflower. Make sure you make extra of that delightfully charred, flavorful crucifer so that you specifically have some left to make these absolutely delicious quesadillas.
I'll even use the lemon tahini sauce that I have drizzled over my smoky roasted cauliflower to also lend a hand as a beautiful sauce for dipping or drizzling with these quesadillas.
Such an easy weeknight meal to throw together. Quesadillas are a staple in our house, as you can take absolutely anything that's left over in your refrigerator, combine it perhaps with a little bit of cheese, grill it in a tortilla and the world's a happy place.
Don't pass this one up. You'll be glad you tried it.
Smoky Cauliflower Quesadillas
Tortillas of your liking Smoky Roasted Cauliflower (recipe HERE) Shredded Cheese (I love a goat's milk cheddar but your favorite melting cheese works just fine) Roasted Red peppers Sliced jalapeƱos (optional) Sliced Scallions (green onions) (Optional) Butter and/or olive oil for skillet Pinch salt (I love to use course sea salt) Lemon Tahini Sauce (recipe HERE) Garnishes Avocado slices Wedges of lime Chopped fresh cilantro For each quesadilla simple follow the following steps. In a medium skillet over medium heat, drizzle in olive oil and or butter, sprinkle a small amount of salt which helps to flavor the tortilla, then lay down a tortilla. Scatter over the shredded cheese. On one side of the tortilla place a few pieces of the roasted cauliflower, roasted red pepper and jalapeƱos and scallions if you're using them. As cheese starts to melt flip the unloaded side of the tortilla over the opposing side and continue to cook until each side is golden, flipping as needed. Cut in half or thirds and drizzle over Lemon Tahini Sauce (recipe HERE) if you like. Adorn with cilantro, a lime wedge and a few slices of avocado
