Enter Shortcut Turkey Tetrazzini: the creamy, cheesy, pasta-filled comfort food your tired fridge turkey dreams about. And the best part? It’s a shortcut recipe, which means you get all the nostalgic vibes without spending your entire evening making a roux or questioning your life choices.  Don't wait for leftover Thanksgiving turkey to make this.  This dish is worthy of buying some inexpensive turkey tenderloins, roast them up in your air fryer (I used my Ninja Foodi) & dice up for just this use.

Wait, What Is Tetrazzini?
Great question. Tetrazzini is that old-school American casserole that sounds like it should be Italian but isn’t. It’s basically what happens when cooked pasta, turkey (or chicken), mushrooms, peas and a creamy sauce meet under a blanket of cheese and crunchy breadcrumbs and bake into bubbly perfection. Think of it as mac and cheese’s older, more sophisticated cousin who went to culinary school but still watches reality TV.

This version leans on pantry staples and a little strategic cheating (hello, canned soup and rotisserie logic if needed) to make something that tastes like you tried hard—without actually trying that hard.

Ingredient    s
  •     12 ounces package egg noodles, cooked according to package directions and drained
  •    3 cups cooked, chopped turkey (or rotisserie chicken)
  •   1 can condensed cream of mushroom or chicken soup (Pacific Foods brand recommended for clean  ingredients)
  •     3/4 cup whole milk (or dairy free milk like coconut milk)
  •     ¼ cup white wine (can substitute stock or broth)
  •     1 cup frozen peas
  •     6 ounce  can sliced mushrooms
  •     2 tablespoons butter
  •     6 ounces Gruyère cheese, shredded (about ¾ cup shredded), divided
  •     3 ounces grated Parmesan cheese, about ⅔ cup, divided
  •     Sea Salt and pepper, to taste
  •     1 cup bread crumbs (I used panko for extra crunch)


Instructions     
  •  Preheat oven to 375 degrees
  • Butter a 9x13-inch baking or casserole dish; set aside.
  • Whisk the condensed soup, milk and wine together in a large mixing bowl.
  • Add the cooked pasta, mushrooms, turkey and peas to the mixing bowl, tossing everything together until it is evenly coated. Add half of the Gruyere and half of the Parmesan cheese and combine well Add salt and pepper to taste. Pour the mixture into the prepared baking dish.
  • Melt the butter. In a small bowl, toss together the bread crumbs, remaining Gruyere and Parmesan and the melted butter. Sprinkle the mixture evenly over the top of the tetrazzini.
  • Bake for 30 to 40 minutes, or until the filling is bubbling and the top is golden brown. Let sit for 10 minutes before serving to allow the sauce to thicken slightly.
