You scream. I scream. We all scream for ice cream! Well, this isn't exactly ice cream, but it's a delicious, non-dairy very easy way to have a dozen ice cream sandwiches in your freezer available for snacking. I have been on a kick where I'm using tub after tub of CocoWhip, which is a non-dairy whipped topping made with coconut milk and coconut oil. While you can certainly use your preferred tub of nondairy whipped topping, I love that the CocoWhip has no hydrogenated oils, leaving me feeling better about using it. Please use whatever you prefer and can easily find. I'd love to mix the cocoa whip with lots of different things to make fabulous, easy desserts. One of my favorites is a shortcut Faux Semifredo which involves a handful of ingredients, a little freezer time and then slice and serve. So easy, looks quite impressive and yummy as well. I also use it in my easy Key Lime Pie, which people tell me is the best they've ever had. Quite a compliment for a pie that takes minutes to put together. While I am using graham crackers for the shortcut ice cream sandwiches, I think chocolate grahams would be absolutely wonderful. I just couldn't find them at the time I was stocking up to make this particular recipe. Cinnamon grams would also be great and lend another layer of flavor. I really like that you can make the filling any flavor you want. Go crazy. You could mix a little bit of cocoa powder into the CocoWhip to make a chocolately version, or perhaps a tablespoon of good liquor such as Grand Marnier if you're making an adults only version. Have I got your wheels spinning now? What fun for a dinner party. They're so simple you could even make 2 batches. One for the kiddos and one for the adults. Shortcut Non-dairy "Ice Cream" Sandwiches 1 container CocoWhip or other non-dairy whipped topping, thawed 1 can sweetened condensed milk (I use coconut sweetened condensed milk) 1 teaspoon vanilla (I love to use vanilla paste) 1/2 teaspoon cinnamon (optional) 1/4 cup mini chocolate chips 24 Graham cracker squares (12 graham crackers) or chocolate graham crackers Mix CocoWhip, sweetened condensed milk, vanilla and cinnamon well. Gently stir in chocolate chips. Line a 9 x 13 inch baking sheet or pan with plastic wrap, letting the sides overlap with enough overhang to wrap over the top. Evenly space 12 graham cracker squares over the plastic wrap. Spoon the filling over the crackers then place the other 12 crackers on top of the filling. Bring the sides of the plastic wrap up to cover the "ice cream" sandwiches and place in the freezer for at least 2 hours to overnight. Once frozen lift out of the tray by the plastic wrap. Gently unwrap over a cutting board and with a large knife, cut into 12 equal sized sandwiches. Wrap and freeze any unused sandwiches. This is so easy and kids can do everything but the cutting. Create your own flavors and mix ins. Enjoy!
