Sausage Stuffed Spaghetti Squash
Serves 

Ingredients:
  • 2 small spaghetti squash
  • 1 lbItalian sausage (pork or turkey)
  • 1/2  small onion, diced
  • 1 cup chopped, frozen kale (thawed and drained well)
  • 1 cup marinara sauce (or salsa)
  • 1 cup shredded cheddar cheese (any melty cheese will work). Extra cheese if you like it super cheesy.
  • 1/2 cup seasoned breadcrumbs (preferably fresh/homemade)
  • Olive oil, for drizzling
  • Salt and pepper to taste


Instructions:

Step 1: Prepare the Spaghetti Squash

**(I start by microwaving each spaghetti squash for 3 minutes on high with a few pokes in the flesh to ensure any steam can escape and not explode in your microwave.  This cuts down the bake time, but if you prefer not to use the microwave, just increase your bake time in the initial step.
  1. Preheat your oven to 425°F
  2. Cut the spaghetti squash in half lengthwise. Scoop out the seeds and discard them (or save them for roasting or planting if you like).
  3. Drizzle the squash halves with olive oil and sprinkle with salt and pepper.
  4. Place the squash halves in a large skillet (or two) or on a baking sheet.


Step 2: Prepare the Sausage Filling
  1. In a large bowl, mix the sausage with the diced onion, kale and half the marinara sauce.  Season with salt and pepper.


Step 3: Assemble the Stuffed Squash


   1.    Fill the wells of the squash with the sausage mixture.  Cover with foil and bake 20-25 minutes.


Step 4: Top and Bake Again
  1. Pull the squash out of the oven.  Top each half with the remaining marinara, cheese and breadcrumbs.  Drizzle with additional olive oil and return the oven uncovered for an additional 20-25 minutes until the cheese is melty, the breadcrumbs are golden and the squash is thorough cooked.


Step 5: Serve and Enjoy!
Once the stuffed spaghetti squash is done, remove it from the oven and let it cool for a few minutes. Garnish with fresh herbs if desired, and serve warm.
