How about caramelized vegetables, savory sausages and crispy tots all brought together in a one dish wonder Sausage, Pepper and Tot Bake. This dish is perfect for weeknights as you can assemble it in about 10 minutes, bake for 30 minutes and serve to your hungry crowd.
This dish came together by happenstance as I came home late one night to an empty fridge, a wilted red pepper and not much else. Trying to decide what to eat with the sparse offerings brought about this happy accident of a dish and it has been one of our favorite quick weeknight meals since.
This dish can be changed up according to what sausages you use, and even the type of tots you find at the store. I always have a package of frozen tots at the ready just in case. One never knows when one might have a tot craving.
I have used chicken sausages, pork sausages, and even soy chorizo as the meat element of this dish, and different tots as well.
Regular tots are perfectly wonderful for this, but I've discovered the Alexia brand of garlic and pepper tots are truly outstanding as a tot topper. I have yet to try this with sweet potato tots, but I know that would lend a totally different flavor and I am sure would be quite yummy as well.
For the veg, you simply chop peppers and onions into bite-size chunks, nestle whatever sausages you're using in amongst your vegetables, then placed the tots on top and bake until those veggies are all roasted and caramelized and the tops are golden and crispy. Spectacular!
This is sure to be a family favorite and kiddos may perhaps not snub their noses at something that is topped with tots.
Feel like adding cheese to the mix? Go right ahead. I feel that the addition of cheese could never be a bad thing.

Sausage Pepper & Tot Bake
8 ounces breakfast sausage links or turkey sausage links 1 large red or yellow pepper, core and stem removed and cut in bite sized chunks 1 red onion, peeled and cut into bite sized chunks 1 tablespoon olive oil 1 teaspoon everything bagel seasoning or nigella seeds (optional) My RECIPE here. 1/4 teaspoon salt (omit if your bagel seasoning contains salt) - I love course sea salt 1/4 teaspoon freshly ground pepper 1/2 28 ounce bag frozen potato tots. I love the Alexia brand with garlic and pepper. Small handful chopped parsley (optional for garnish) Preheat oven to 425 degrees Place pepper and onion in a casserole dish or on a smaller baking sheet. Drizzle over the olive oil, salt, pepper and everything bagel seasoning. Nestle the sausage links into the pepper and onion mixture. Top the sausage, pepper and onions with the tots and drizzle with additional olive oil if desired. Bake at 425 degrees for about 30 minutes until the vegetables are caramelized and the tots are golden and crispy. Top with parsley for an element of green freshness if desired Try different flavors of tots and sausages to change things up. Add a cup of shredded cheese to the top if you'd like a cheesy version.
