No Pizza Oven? No Problem!

Let’s talk about sweet, salty, and spicy perfection: the Pineapple, Prosciutto & Jalapeño Pizza. This flavor-packed combo might sound a little rebellious to traditionalists, but once you take a bite, you’ll get why it works. And the best part? You don’t need a fancy pizza oven to make it at home—just your regular oven.

This recipe is an at-home interpretation of the iconic pizette served at Bar Acuda in Hanalei, Kauai. If you’ve ever had the pleasure of dining there with this sizzling little number in front of you, you know the vibe and all thoughts of "pineapple doesn't belong on pizza" go out the window.  This is our way of bringing a little Hawaii back to your own kitchen.

Why This Combo Works:
  • Pineapple brings juicy sweetness.
  • Prosciutto adds that melt-in-your-mouth saltiness.
  • Jalapeños cut through it all with a sharp, spicy kick.
  • Fig Jam... really?  It brings additional smoky sweetness to the pizza sauce and if you can find a caramelized onion, bacon jam....you get extra points.

Pro Tips:
  • Pat your pineapple dry to avoid soggy pizza.
  • Layer prosciutto last or add it post-bake if you like it soft rather than crisp.
  • Hot honey drizzle (yes, seriously) takes it to the next level.

This pizza hits every note—savory, spicy, and sweet—with a killer crust and loads of flavor. Whether you’re hosting a DIY pizza night or just craving something a little extra on a Tuesday, this combo brings the heat (literally and figuratively) without needing a pizza oven.

Pineapple, Prosciutto & Jalapeño Pizza


Pizza Dough (I used a sourdough version of my basic pizza dough, or you can use store bought)
For the Toppings:
  • ½ cup pizza sauce or marinara
  • 1/4 cup fig jam or caramelized onion bacon jam
  • 1 small wheel brie or goat's milk brie, cut into chunks
  • 4–6 slices prosciutto, speck (smoked prosciutto) or salami cut into slices
  • ½ cup pineapple in thin slices,  (fresh or canned, drained well)
  • 1 jalapeño, thinly sliced (seeds in for more heat)
  • Optional: chili flakes, fresh basil, or a drizzle of hot honey


🔥 How to Cook It Without a Pizza Oven:
Oven Method (Sheet Pan or Pizza Stone)
  1. Preheat your oven to 450°F,  If you have a pizza stone, toss it in now.
  2. Roll out your dough on a floured surface (I find it very easy to roll out onto a parchment stone that can then be transferred to the baking stone.
  3. Transfer  to the preheated stone and bake 10 minutes.
  4. Assemble: Remove the pizza crust from the oven.  Spread sauce and jam evenly over the crust.  Sprinkle brie, then layer on pineapple, prosciutto, and jalapeños.
  5. Bake for an additional 10–12 minutes, or until the crust is golden and cheese is bubbling.
  6. Optional: Broil for 1–2 minutes to get that bubbly, charred top.
