Ingredients 2 lbs chicken thighs 6-10 cloves garlic, whole and in the skin (you’ll see why later;-) 2 tablespoons olive oil 1-2 jalapeños, roughly chopped (leave out if you don’t like the heat) 1 tablespoon smoked paprika 1 tablespoon ground cumin 1 teaspoon sea salt, such as Redmond real salt Instructions Marinate the chicken: Place chicken in a large skillet or roasting pan. Sprinkle over spices and salt then drizzle with olive oil. Add the garlic cloves, jalapeño and mix everything together with your hands. Place chicken flat and ensure the skillet is not overcrowded. Marinate 10 minutes to overnight for max flavor, Preheat oven to 425 degrees. Roast in the oven for 35-45 minutes until that chicken is charred and glorious while you make the Avo-Lime crema. Once out of the oven, let chicken rest for a bit while you carefully remove the garlic cloves and squeeze them from the peel onto the chicken. This is the most glorious bite when you get a bit with your chicken. Serve it up & watch everyone devour it! Avocado Lime Crema Ingredients 1 ripe avocado Juice of 1 lime 1 small clove garlic Small handful cilantro Sea Salt, to taste Instructions An a small food processor or blender, blend all ingredients until smooth and creamy. Adjust salt and lime to taste. Add a tiny bit of water if the mixture is too thick.
