How about a Parmesan crusted tortilla that snuggles inside of it a fluffy golden omelette with everything bagel seasoning and a hint of bright, herby parsley? It's the perfect quick breakfast and can even be a handheld if you don't mind getting your fingers just a little bit messy.
This is so easy to put together. All I do is beat a couple of eggs and have them at the ready. Then I sprinkle salty Parmesan or Asiago cheese into a warm nonstick skillet, top it with the tortilla, pour over the eggs and season at will.
Everything Bagel Seasoning - For this particular version I use a dose of everything bagel seasoning, which is a fabulous all purpose seasoning blend that contains poppyseeds, sesame seeds and dried garlic and/or onion flakes. It lends so much flavor. I like it over eggs, over avocado, and even over mango slices. It's just really good, and I have a super easy recipe to make your own everything bagel seasoning. Click here for a recipe which doesn't have any salt added to the blend, so you can adjust your salt levels individually as you're adding this to recipes. I really like to make all my spice blends without salt so I can adjust salt to my liking as I cook.
For this version I also love a bright punch of fresh parsley. It lends so much flavor and when you bite into this tortilla omelette, the parsley bits really come through and complement.
I have to say my favorite part is the Parmesan crust that forms as you let the grated Parm slowly melt and turn golden in the skillet. It's just that wonderful cheese layer that lens the texture and flavor that makes this omelette stand out. Let me know what versions you might try of this speedy tortillalette. Parmesan Tortillalette (Tortilla Omelette) Makes 1 Tortilla Omelette 1/4 to 1/2 cup parmesan or asiago cheese (depending on how cheesy you want this to be) 1 tortilla that is roughly the size if your skillet 2 eggs, beaten 1 teaspoon Everything Bagel Seasoning (see my easy recipe here) 2 tablespoons chopped parsley (optional) In a nonstick skillet that's roughly the size of your tortilla, place in about half of the Parmesan cheese and as it starts to melt place the tortilla over the top of the cheese. Pour the two beaten eggs over the top of the tortilla, then add additional Parmesan or asiago cheese, the everything bagel seasoning and the chopped parsley. When the egg begins to set, carefully flip the omelette over to cook for a few seconds on the other side. Carefully slide out onto your serving platter, fold in half and dig in.
