One Skillet Creamy Lemon Chicken & Orzo

Ingredients
  • 1 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1½ cups uncooked orzo. (a rice shaped pasta)
  • 3 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup heavy cream
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ cup grated Parmesan cheese
  • Sea salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions
  1. Melt the butter & olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds until fragrant.
  2. Stir in the orzo and cook for 1 to 2 minutes, allowing it to lightly toast.
  3. Pour in the chicken broth and bring to a gentle boil. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally until the orzo is tender.
  4. Stir in the shredded chicken and heavy cream. Cook for another 2 to 3 minutes until everything is heated through.
  5. Add the lemon zest, fresh lemon juice, and Parmesan cheese. Stir until the cheese melts into a silky sauce.
  6. Taste and season with salt and pepper as needed.
  7. Garnish with chopped parsley and serve immediately with extra Parmesan and lemon wedges if desired.
