Traditional enchiladas require dipping tortillas in sauce, filling each one, rolling them up, and carefully arranging them in a baking dish. While delicious, the process can be time-consuming on busy weeknights. This simplified casserole delivers all the same flavors with a fraction of the effort.

Instead of rolling individual enchiladas, layers of flour tortillas, tender rotisserie chicken, creamy enchilada sauce, and plenty of melted cheese are stacked lasagna-style. The result is a rich, satisfying casserole that's ready for the oven in minutes.

Using rotisserie chicken makes prep even easier, while cream cheese blended into the enchilada sauce creates a silky, creamy texture that takes this dish over the top. Tips for Success
  • Soften the cream cheese before mixing for the smoothest sauce.
  • Rotisserie chicken keeps prep quick, but leftover cooked chicken works just as well.
  • For extra flavor, use fire-roasted enchilada sauce or add a can of diced green chiles to the sauce mixture.
  • This casserole can be assembled up to 24 hours ahead and refrigerated until ready to bake.
  • This also makes a great casserole to prep and freeze for a future bake.

No-Fuss Chicken Enchilada Casserole
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 6-8
Ingredients
  • 1 rotisserie chicken, shredded (about 4 cups)
  • 10 ounces red or green enchilada sauce
  • 8 ounces cream cheese, softened
  • 8-10 flour tortillas (6-inch or taco size) 
  • 3 cups shredded Mexican blend cheese, divided
  • Optional toppings: sliced green onions, diced tomatoes, sour cream, cilantro, sliced jalapeños, diced avocado


Instructions
  1. Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish or equivalent casserole dish.

  1. In a medium bowl, whisk together the enchilada sauce and softened cream cheese until smooth and well combined. A few small lumps of cream cheese are fine as they’ll melt when baking.

  1. Spread a thin layer of the enchilada sauce mixture on the bottom of the baking dish.


Arrange a layer of flour tortillas over the sauce, overlapping as needed to cover the bottom.


Top with the shredded chicken,  the sauce mixture, and half of the shredded cheese.


Top with remaining tortillas and cheese.


Cover with foil (or lid if you casserole has a glass lid) and bake for 20 minutes.


Remove the foil and continue baking for 10-15 minutes, or until the cheese is melted and bubbly.


Let the casserole rest for 5-10 minutes before slicing and serving.


Garnish with your favorite toppings and enjoy.


Storage
Store leftovers covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave or warm the entire casserole in a 350°F oven until heated through.
