My Mom has been a professional baker and caterer since I was in middle school. That's been quite some time folks. I'd say about 40 or so years. So when Mom has recipes to share, I pay attention and am always to happy to pass along to you.
This is a classic vanilla butter cake mix, where all the dry ingredients are combined, then all you need to do is pull your mix out of the pantry, add butter, eggs, milk and vanilla and voila...a gorgeous, moist, homemade cake that will have everyone asking for more.

Control the ingredients - no additives, preservatives, artificial anything Customizable - make it your own every single time Convenience - just as quick as opening a store bought cake mix Cost - Costs less because you buy the flour & sugar for other uses anyway Gift Giving - makes a cute gift...simply attach a recipe card for, let's say...the Vanilla Butter Cake mentioned above.
Variations:
Funfetti Birthday Cake - stir in 1/2 cup rainbow sprinkles before baking Chocolate - replace 1/2 cup of the flour with cocoa powder and add additional 2 tablespoons of avocado oil for tenderness. Lemon Sunshine - add zest of 1 lemon and swap half of the milk with freshly squeezed lemon juice. Spiced Holiday - add 2 teaspoons cinnamon & 1/2 teaspoon nutmeg to the batter. Finish it off with cream cheese icing.
My Mom's DIY Yellow Cake Mix
2 cups all purpose flour 3/4 cup cane sugar 3 1/2 teaspoons baking powder 1 teaspoon sea salt In a large bowl, whisk together well. Transfer to a glass jar (also makes for cute gift giving presentation) or storage container. Keeps for a month or 2 in the pantry or several months in the fridge to retain freshness. To use: 2 8" rounds or 9 x 13 baking pan buttered and floured, or lined cupcake tin. To the mix add: 3 eggs 1/2 cup avocado oil or 1 stick butter 1 cup milk ( I like to use almond or coconut milk) 1 teaspoon vanilla Preheat oven to 350 degrees F In a stand mixer or with a hand held mixer, beat everything on low speed 30 seconds then high speed for 3 minutes, scraping bowl occasionally. Pour batter into prepared cake pan(s). Bake 9 x 13 cake for 40-45 minutes. Rounds take about 30 minutes. Cupcakes take 18-20 minutes.
