Tips for Perfect Molasses Whiskey Butter Carrots
  • Carrot prep: Slicing the carrots into long batons (as seen above), gives you more surface area for that beautiful carmelization.
  • Whiskey sub: If you prefer a non-alcoholic version, you can substitute the whiskey with apple cider or even leave out entirely.  I used 5 Grain Bourbon Whiskey from my friends at Six & Twenty Distillery in Greenville, South Carolina.
  • Molasses sub:  If you can't get molasses, or simply don't want to use it, you can use maple syrup or honey.  It won't have the depth of flavor of deeply mineraly molasses, but it will be scrumptious nevertheless.

Molasses Whiskey Butter Carrots
  • 1 pound carrots (peeled if not organic), cut into batons lengthwise
  • 2 tablespoons unsalted butter
  • 2 tablespoons molasses
  • 2 tablespoons whiskey (choose a good-quality bourbon or rye)
  • Salt and pepper, to taste (I use 1 teaspoon smoked salt for an even deeper flavor)
  • Fresh parsley, chopped (for garnish)

Preheat your oven to 400 F


  1. Prepare the carrots:  Peel the carrots if they are not organic and slice lengthwise into long sticks or batons (essentially cutting each carrot into quarters). You can also use baby carrots if you want a quicker prep time. 
  2. Make the Molasses Whiskey Butter:  Melt the butter in a microwave safe dish, then whisk in the molasses (or honey ir maple syrup) and whiskey or apple cider if using.
  3. Roast the carrots: On a baking sheet (preferably lined with parchment paper), place the carrots in a single layer then drizzle over the molasses whiskey butter.  Sprinkle with smoked salt & pepper.  Toss to coat.  Roast about 30 minutes (depending on the thickness of your carrots) tossing once about half way through.
  4. Serve:  Adorn with chopped parlsey for a pop of green freshness.
