Mediterranean Waldorf Salad with Creamy Lemon Tahini Dressing
Makes 2 large servings 4 cups salad greens (like arugula and butter lettuce) 1 cup chopped celery (I like to slice on the diagonal for appearance) 1 apple, chopped 1/2 cup cooked lentils or chickpeas 3-4 Medjool dates, pitted and chopped 1/2 jalapeno, chopped (optional if you like some heat) 1 avocado, sliced thinly Mix all salad ingredients except avocado together. Divide between 2 plates and place 1/2 of the avocado over each. Drizzle the dressing over the salad. Any extra will keep in the fridge for about a week in a jar with a tight fitting lid. Lemon Tahini Dressing 1 lemon, juiced Olive oil (amount to equal the lemon juice) 1 heaping tablespoon tahini (sesame paste) 1 tablespoon honey 1 clove garlic, grated Small pinch salt & pepper Combine in a mini blender (or in a mason jar) and blitz or shake until well combined and creamy. You may need to add 1-2 tablespoons of water to thin out the dressing if it's too thick to pour.
