Mediterranean Fusion Stuffed Poblanos
Ingredients Serves 4-8
Instructions Preheat oven to 400 degrees F 1. Prepare the Poblanos Slice the poblano peppers in half lengthwise and remove seeds and membranes. Place them cut-side up in a lightly oiled baking dish. (I microwave my peppers for about 3 minutes first to soften them slightly) 2. Make the Filling Add onion, tapenade, roasted tomatoes (or sun dried tomatoes), parsley and olive oil in a large bowl with salt and pepper. Mix thoroughly. Add the ground turkey and mix gently. 3. Stuff & Bake Spoon the turkey mixture generously into each poblano half. Top with shredded cheese. Bake for 30 minutes oruntil the peppers are tender and the cheese is bubbly and lightly golden. The ground turkey should be completely cooked through. 4. Finish & Serve Garnish with fresh herbs if desired and serve warm.
