Pull apart fluffy biscuits filled with oozy cheese, savory meatballs and zesty marinara. An easy cousin to legit meatball subs. They're so easy to put together and great for a quick dinner, game day snack, party pleasing offering and welcome at any gathering.
I use a quick shortcut of frozen meatballs that I partially thaw. Turkey meatballs are my pick, but use whatever you like and feel free to use your Great Great Grandma's homemade meatball recipe if you're an overachiever.
A great jarred marinara and purchased, canned biscuits are the other shortcuts that bring these biscuit bombs all together quickly.
Have you tried my Buffalo Chicken Biscuit Bombs? If not, those are another version of these tasty, flaky rounds that are super yummy. My family loves them as well.
The amount of cheese you use is up to you. If you love extremely cheesy bakes, feel free to double the amount of cheese for double the cheese pull.
You can pull in the kiddos in this assembly job. They'll love playing with dough, and making their own little parcels will ensure they're going to partake once baked and gobble these up.
Meatball Sub Biscuit Bombs
1 cylinder large biscuits (like Pillsbury Grands) 1 1/2 cup marinara (use your favorite) plus extra for dunking & dipping 4-6 ounces shredded Mozzarella, provolone or your favorite melting cheese 16 frozen meatballs, partially thawed (I used turkey meatballs) Butter for coating the skillet or baking dish. Small handful chopped parsley for garnish (optional) Preheat oven to 425 degrees. Butter a 10 inch cast iron skillet or baking dish. The assembly is very easy. Roll each of the biscuits out into a slightly larger circumference than its original size (about 5-6 inches) Place two meatballs in the center of the biscuit dough, about 1 tablespoon of marinara, and about 1 tablespoon of cheese. Fold the dough up over the filling, pinching in the ends until it is entirely closed and place seam side down in the buttered skillet. Repeat with the remaining biscuit rounds, placing them all evenly seam side down in the skillet. Spoon another tablespoon or so of the marinara on top of each biscuit, then top with remaining cheese and bake for about 30 minutes until cooked through and the tops are very golden. Once out of the oven sprinkle with parsley and serve with additional marinara for dipping.
