I've had a love affair with matcha since it came on the scene. I've always loved green tea, so my first experience with a matcha latte had me hooked and wanting to try all things matcha.
I received several tins of matcha as gifts so still experimenting and trying various matcha recipes. These matcha "baked" oats are loosely called baked oats as there's no baking involved other than what your microwave does for you. If I'm wanting this as a breakfast mug, I don't have time for the oven so I love my kitchen assistant; the microwave. ![]()
While fresh peaches in this are wonderful, I had a package of freeze dried peaches and thought that would be a fun and whimsical addition to these oats. Plus peaches and matcha pair very well together. Yummy.

This makes a very generous mug so make sure your mug is a large one. No skimpy 8 ounce mug for this.
Matcha - if you're not familiar with matcha, it's simply a finely ground green tea powder.
Egg White Powder - this is an optional addition that lends a nice amount of hunger staving protein to the mix. You can certainly leave it out, but I like the satiety level it offers. When combined with the fat content of coconut milk, this makes for a hearty breakfast. Great after a morning run or workout. 1 tablespoon of egg white powder has about 6 grams of protein.
Although this is a great breakfast, it's also a nice snack or pseudo dessert when you want something with less sugar, but quite filling. You can pour the mixture into 2 smaller mugs and share with a loved one. Just adjust your cooking times depending on your microwave.
Let the matcha madness ensue! Matcha Peach "Baked" Oats Mug (Microwave method) 1 large or 2 smaller servings Heaping 1/2 cup rolled oats (quick cooking but not instant) 1 cup coconut milk (or oat milk) 1 tablespoon coconut sugar 1 tablespoon egg white powder (optional) *see cook's note 1 teaspoon matcha powder 1/4 cup freeze dried peaches, crumbled (you can also use chopped fresh peaches) In a blender (I use a mini Ninja Blender available on our SHOP page), blitz up the oats, coconut sugar, matcha and egg white powder (if using) just until the oats are a fine texture. This only takes a few seconds typically. Add in the coconut milk and blitz again until well blended. Pour into a large microwaveable mug , stir in the peaches and microwave for approximately 90 seconds. The oats will set up a bit as they begin to cool so don't be alarmed if the mixture looks runny right out of the microwave. Let sit about a minute before you dig in. It will be very hot right out to the microwave. Serve with coconut whipped cream or some fresh peaches chopped up. *Cook's Note - egg white powder can be found online or at most grocery stores where they sell either baking goods or fitness/protein foods. 1 tablespoon of egg white powder has approximately 6 grams of protein so really helps to make this a filling oat dish that will stick with you.
