Low Carb Cinnamon “Roll” Bites
Serves 1 oe 2

Ingredients
For the Cinnamon Roll Bites
  • 2 zero-carb tortillas
  • 2 oz cream cheese, softened
  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon
  • Spray oil


For the Icing
  • 2 oz cream cheese, softened
  • 2 tablespoons Swerve or other confectioners sugar substitute
  • 1 teaspoon maple syrup
  • ½ teaspoon cinnamon
  • Splash of milk if needed for thinning

Instructions

1. Prep the Tortillas
Spread softened cream cheese evenly over one tortillas.
Sprinkle the coconut sugar & cinnamon over the cream cheese layer.
Top with the second tortilla and roll tightly into a log shape.

2. Slice and Air Fry
Cut the rolled tortillas into small pinwheels, about 1 inch thick.  I make 6 pinwheels
Place the slices into the air fryer basket (I line mine with parchment paper) in a single layer, cut side up.  Spray with a bit of oil.
Air fry at 390°F for 7–10 minutes, or until golden brown and slightly crispy on the edges.
Keep an eye on them near the end since air fryers can vary.

3. Make the Icing
While the cinnamon roll bites cook, whisk together the cream cheese, confectioners sugar substitute, maple syrup, and cinnamon in a small bowl until smooth.
If the icing feels too thick, add a tiny splash of milk to loosen it up.

4. Finish and Serve
Once the tortilla cinnamon rolls are warm and crispy, drizzle the icing generously over the top.
Serve immediately while warm and gooey.
