I love lavender much to the chagrin of my family, who are not lavender lovers. I love to use lavender in many things that they may snub their collective noses at, but I’m blessed to have a few friends that share my love of lavender. I’ve tried to sneak it into ice creams, cakes and cookies (check out my Lavendoodles recipe which my family actually do enjoy). And I must say that Tim was a fan of this tasty drink, much to my surprise and delight.
Making a lavender syrup is so easy, so if you’re a fan of lavender or want to give it a try, start with this beautifully florally syrup. It goes fabulously in a latte made with a bit of almond milk or coconut milk creamer. It’s wonderful drizzled over toasted pound cake slices with ice cream atop.
This cocktail can easily be made into a mocktail sans the tequila. The tonic water just gives it that nice effervescence that is so refreshing with the lime. Lavender and lime pair really well together. I made the cocktail and drink about half of it before asking Tim to give it a try. He finished it off then requested a full one exclusively for himself. That doesn’t sound like someone who dislikes lavender so I think I’ve won him over. At least a tiny bit.
Lavender Sunset
Makes 1 1 ounce lime juice 1 ounce silver tequila 1 ounce lavender syrup Tonic water (such as Fever Tree) Lavender buds - for garnish Cane sugar - for garnish Lime slices - for garnish Ice Combine the lavender buds with equal amount of cane sugar in a small shallow plate. Swipe a bit of lime around the rim of your glass then place the rimmed side down in the lavender and sugar mixture , twisting until you have a nice coating on the glass. Add ice to a cocktail shaker or jar with a tight fitting lid. Add in lime juice, tequila and lavender syrup. Shake vigorously until combined. Strain into a glass that’s been rimmed with the lavender buds and sugar. Top off with a bit of tonic water to taste and garnish with a lime slice. Lavender Simple Syrup 1 cup cane sugar 1 cup water 1 heaping tablespoon lavender buds (culinary grade) Combine sugar and water in a medium saucepan and add lavender buds. Bring to a simmer and ensure all the sugar has been dissolved, then immediately remove from heat and let sit at least 30 minutes to allow the lavender to infuse the syrup. Pour through a strainer into a jar so you catch all the lavender buds and just have beautifully flavored syrup.
