Turkey is a lean protein, which makes it a great choice for a lighter burger (it's also less expensive than beef at the moment)—but it also means it can dry out quickly. That’s where the air fryer shines: it circulates hot air around the patties, sealing in moisture while creating a slightly crisp, golden-brown crust.
And unlike the stovetop, there’s no babysitting or oil splatter. Just set it and let it work its magic.

How to Keep Turkey Burgers Moist
Here are the secrets to a burger that stays juicy—not rubbery:
  • A touch of mayonnaise: Helps bind and add richness.
  • Using a more dark meat turkey blend makes for a juicier burger.  I use 85/15 blend.
  • Don't overmix: Combine ingredients just until blended to keep the texture tender.
  • Don’t overcook: Pull them as soon as they hit 165°F inside—no higher!

Serving Suggestions
Pile your air-fried turkey burger on a brioche bun with your favorite toppings—think sliced avocado, lettuce, juicy tomato, and a smear of sriracha mayo (or Truff Hot Sauce mixed with mayo as I did). Or skip the bun and serve it on a salad, in a lettuce wrap, or alongside roasted sweet potatoes for a low-carb dinner.

Make-Ahead & Freezer Friendly
These burgers are perfect for meal prep. Shape the patties ahead of time and store them in the fridge for up to 2 days, or freeze them raw between parchment sheets for future weeknight wins. Just add a couple of extra minutes to the cook time if air frying from frozen.

Juicy Air Fryer Turkey Burgers
Makes 4 patties


Ingredients:

  • 1 lb ground turkey  (85%/15%)
  • 1 tablespoons chopped fresh thyme or oregano
  • 1 tablespoon chopped chives
  • 2 teaspoons taco seasoning blend (if using my recipe add 1 tsp. Sea salt)
  • 2 tablespoons mayonnaise ( prefer Chosen brand)
  • 1 teaspoon salt (if your taco seasoning doesn't already have salt in it)


Instructions
  1. Mix the patties:
    In a medium bowl, gently combine all ingredients except turkey. Add turkey and don’t overmix—just enough to bring everything together.
  2. Shape the burgers:
    Divide mixture into 4 even portions. Form each into a patty about ½ inch thick. Make a small indentation in the center with your thumb to prevent puffing.  Place onto parchment paper.
  3. Cook the patties:
    Add the patties to the air fryer.  Cook for 10–12 minutes, flipping halfway, until internal temperature reaches 165°F.
  4. Serve hot:
    Let burgers rest 2 minutes before serving. Build your favorite burger or enjoy on top of a salad or grain bowl.  We serve ours in a butter lettuce leaf with my favorite Avocado Mint Crema.
