Johnny Marzetti
Serves 6-8 8 ounces pasta, cooked (macaroni or rotini) 8 ounces shredded cheese, like mozzarella or cheddar 1 pound (16 ounces) ground beef (or turkey or sausage) 1 onion, diced 1 stalk celery, diced 1 cup mushrooms, sliced 2 tablespoons olive oil. 1 tablespoon chili powder 1 1/2 teaspoon sea salt 1 28 ounce can crushed fire roasted tomatoes 1 14 ounce can fire roasted tomatoes Small handful chopped parsley for garnish if desired Preheat oven to 350 degrees. In a medium skillet saute the onion, celery and mushrooms in the olive oil with 1/2 teaspoon salt until the onions are translucent and celery begins to soften. Add in the ground beef with 1 teaspoon salt and chili powder and cook mixture together until the ground beef is cooked through. Transfer to a large bowl to mix or mix directly in your casserole. To bake you'll need a 9 x 13 inch pan or similar sized casserole. Add in the tomatoes and half the cheese, giving everything a thorough mix. Top with remaining cheese and bake about 30 minutes, or until cheese is melty and begins to brown. Garnish with chopped parsley if desired and cool slightly before serving.
