Heavenly Hots Greek Yogurt Pancakes
2Eggs 1 cup full fat greek yogurt, plain 1/2 teaspoon Baking soda 2 1/2 tablespoons all purpose flour (or gluten free flour) Small pinch sea salt Butter or oil for frying To the container of ablender, add the eggs, salt, baking soda, flour and greek yogurt. Process until smooth and set aside. Heat a griddle or skillet over medium heat, then add enough butter or oil to lightly coat it. Ladle batter onto the griddle to make the size pancakes you prefer. Slightly smaller is better since these cook slowly due to all the high protein yogurt. Cook until a few bubbles appear on the top then flip and cook on the other side until golden brown. Serve as desired with butter, syrup, berries or even a dollop of whipped cream.
