What Are Hasselback Sweet Potatoes?

Hasselback sweet potatoes are a visually striking way to prepare this nutritious root vegetable. Originating from the Hasselback potato method made popular in Sweden, this technique involves slicing the sweet potatoes thinly, without cutting all the way through. This allows the sweet potatoes to fan out while roasting, creating a crispy exterior and a fluffy interior. The result is a dish that’s both beautiful and delicious!

Sweet potatoes are not just a pretty face; they pack a serious nutritional punch. Here are some of the key health benefits:

GREAT KNIFE SET                                  NINJA FOODI MULTI-USE             ESSENTIAL CUTTING BOARD
Hasselback Sweet Potatoes


Ingredients:
  • 4 medium to small sweet potatoes (smaller sweet potatoes will roast faster)
  • 4 tablespoons olive oil, divided
  • 2 teaspoons Za'atar middle easter spice blend (optional)
  • Salt and pepper to taste
  • Small handfulfresh parsley
  • 1/4 cup salted & shelled pistachios




Instructions:
  1. Preheat the Oven: Start by preheating your oven to 425°F (220°C).  I used the roast setting on my Ninja Foodi, so no preheating was required there.​
  2. Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Place them on a cutting board and use a sharp knife to make thin, even slices down the length of each sweet potato, being careful not to cut all the way through—leave about 1/4 inch at the bottom intact.  **Using a pair of chopsticks placed on either side of the sweet potato ensures your knife will not cut all the way through.
  3. Season: Drizzle the sweet potatoes with 2 tablespoons olive oil, ensuring it seeps into the slices. Sprinkle with salt and pepper, and  the Za'tar if using.
  4. Roast: Place the sweet potatoes on a baking sheet lined with parchment paper. Roast in the preheated oven for 30-45 minutes, or until the edges are crispy and the insides are tender.  If roasting in the Ninja Foodi, expect 25-35 minutes depending on the size of your sweet potatoes.
  5. Make the Pesto:  Chop the parsley and pistachios together until a course texture slightly chunkier than breadcrumbs,  Place in a small bowl.  Drizzle in 2 tablespoons of olive oil and mix well.
  6. Serve: Once done, remove from the oven and let them cool for a few minutes. Serve warm, garnished with the rustic parsley pesto.
