When melon is in season, I’m looking for different ways to use it other than as a snack or in a fruit salad. I love a melon granita and my newest love is grilled melon, which I discovered happens to be an amazing addition to a sandwich. Case in point, this wrap.
I blend a little mango chutney, like Patak’s, with mayo and then add the grilled melon, some good sliced turkey from the deli, crunchy lettuce, buttery avocado and a drizzle of sriracha for the heat element. Roll it all up in a tortilla or your wrap of choice and you have a fantastic quick meal. If you’re not familiar with mango chutney, it’s a great condiment to keep on hand. It’s slightly sweet and tart with great spices, some garlic and the hum of ginger tingling your tongue. I use it in a slow cooker chicken dish which requires very little other than chicken and a jar of mango chutney. It’s definitely worth your giving it a try.
I had my 4 month of grandson, Rowan, “helping” me in the kitchen this particular day. One day I know he’ll be a great soux chef, but for now I think being able to put a speedy lunch on the table for Tim and I was the goal. It had been a very long time since I babysat a 4 month old. Kudos to all the Moms of littles! You need a quick lunch like this! Boy was I wiped out at the end of the day.
Tim loved this wrap. He’s always my best taste tester and it’s easy for me to tell when he loves something or when he just merely “likes” something, or if he’s totally not a fan. This wrap was requested again & again. He even wanted it served at this birthday party lunch, which was a grill out.
Grilled Melon & Turkey Wrap with Mango Chutney Mayo
Makes 2 wraps 2 slices canteloupe or Tuscan melon 1/4 cup mayonnaise 1 Tablespoon mango chutney (such as Patak’s) 2 tortillas or wraps of choice (coconut wraps are also amazing and slightly sweet) 4 slices good quality deli turkey (such as Boar’s Head) 2 teaspoons sriracha (more if you like it spicier) 1/2 avocado, sliced thinly 2 leaves of crunchy lettuce like baby gem or romaine For the grilled melon, simply place the melon slices on a preheated grill pan like the one on our shop page (or on an outdoor grill). Sear for a minute on each side to get a nice char. Combine mayo and mango chutney. Mix well. Divide between wraps and spread evenly over each wrap. Evenly divide and layer on melon, turkey, avocado and lettuce. Squeeze sriracha over each, roll up tightly and slice on the diagonal for serving. Enjoy!
